Two Superbowl Appetizers (Quick and Easy): Artichoke Dip and Cocktail Weenies

As the Superbowl is fast approaching, I’m posting recipes of my favorite two appetizers:  Artichoke Dip, and Cocktail Weenies.  These recipes are guaranteed to taste great!  And as a  “I-don’t-have-the-patience-to-cook” cook, both recipes are easy to prepare!


Artichoke Dip   

Preheat oven to 400 degrees

Stir together: 

  • 1 cup mayonnaise  
  • 1 cup Parmesan cheese (freeze first)
  • ½ cup finely chopped onions

Pulse until finely chopped


Drain 1 13-3/4 oz can of Artichoke hearts (in water)

Stir artichoke hearts into cheese mixture with 1 tbsp of fresh lemon juice

Add ¼ – ½ tsp black pepper

Put mixture into crock

Mix 1 tsp olive with 3 tbsp of dry unseasoned bread crumbs and sprinkle over the top of the mixture

Bake for 20 minutes

Serve with crackers or chips


Cocktail Weenies

1 large jar of grape jelly (NOT jam)

1 large package of cocktail weenies

1 bottle of cocktail sauce

Combine all ingredients in a crock pot, early in the morning.  Set on high and let it go!
